Lemon Pepper Chicken w/ Rice, Zucchini, Squash, & Carrots

So recently I threw together an impromptu dinner that fit my macros, was quick and easy, but that I could still get my picky boyfriend to eat. This is actually a big deal for me because I have literally never cooked anything without following instructions on the back of the box or some sort of recipe… and it actually turned out okay!

What I came up with was Lemon Pepper Chicken w/ Rice, Zucchini, Squash, & Carrots. I’m not going to lie, I super cheated on the rice because I am forever failing at cooking real rice. I always have to use the 90 second microwaveable rice pouches that you can buy at Aldi, Walmart, & most other local grocery stores. Although I cook the rice in the microwave, you can make it any way that works best for you. Additionally, I choose to make more carrots and less zucchini and squash as my boyfriend will only eat the carrots out of the vegetables in this recipe so I make extra for him. You can swap out some carrots for more zucchini and/or squash if preferred.

Ingredients

6 4oz. boneless, skinless chicken breasts

6 servings of rice (I used 2 pouches of Uncle Ben’s 90 second microwaveable rice, original)

700g of carrots, peeled & sliced

70g zucchini squash, sliced

70g yellow squash, sliced

5 tbsp. olive oil

lemon pepper

salt

Instructions

Preheat the oven to 350 degrees Fahrenheit. Meanwhile, use non-stick cooking spray in a 9×11 baking dish (just in case ☺). Then, coat the chicken in 1 tbsp. of olive oil. Then, season on both sides with lemon pepper and salt. Next, toss the vegetables in 3 tbsp. of olive oil. I kept the carrots separate in mine. Then season the vegetables with lemon pepper and salt as well. Add the chicken and vegetables to the baking dish. Cover with foil. Bake at 350 degrees for 40 minutes.

Once that 40 minutes is up, I started the microwave rice. While the rice is in the microwave, I removed the foil and broiled the chicken and vegetables for a couple of minutes until the vegetables were browned on top. Once the rice was done in the microwave, I put it in the bowl I tossed the vegetables in to coat the rice with olive oil and seasonings.

And, wallah! You have dinner!
